Ingredients Group 1: Filling 1 pound ground chicken or ground beef 1 small onion, finely grated 2 garlic cloves, minced 2 tsp chopped parsley 1 teaspoon salt 2 tsp breadcrumbs ½ teaspoon black pepper ½ teaspoon paprika ½ teaspoon pepper 1 tsp olive oil Ingredients Group 2: Dumplings ½ cup plain yogurt 1 small garlic clove, grated 2 tsp butter 1 teaspoon paprika 1 tsp chopped parsley or dill Extra black pepper to taste
Make the Filling In a large bowl, combine the ground chicken or beef, grated onion, garlic, parsley, salt, black pepper, paprika, and breadcrumbs.
Mix until everything is well combined, then shape the mixture into small balls.
Cook the Blanket Dumplings Heat the olive oil in a large nonstick skillet over medium heat.
Add the meatballs to the skillet, leaving a little space between each one.
Place one dumpling wrapper over each meatball like a blanket.
Pour 1/3 to 1/2 cup water into the pan, then cover immediately with a lid.
Cook for 5 to 6 minutes, or until the filling is cooked through and the wrappers turn soft and slightly translucent.
Remove the lid and cook for 1 more minute if you want the bottoms slightly crispy.
Finish and Serve In a small bowl, mix the yogurt with the grated garlic.
In a small pan, melt the butter and stir in the paprika for a quick butter sauce.
Plate the dumplings, spoon over the garlic yogurt, and drizzle with paprika butter.
Finish with parsley or dill and extra black pepper before serving.
Use dumpling wrappers straight from the package and keep them covered so they do not dry out.
Do not make the meatballs too large, or the wrappers may not cover them well.
For a crispier base, leave the dumplings in the skillet for 30 to 60 seconds after the water evaporates.
You can use ground chicken, beef, or turkey depending on your preference.
Serve immediately for the best texture.
