Ingredients
  

Ingredients Group 1: Filling

  • 1 pound ground chicken or ground beef
  • 1 small onion, finely grated
  • 2 garlic cloves, minced
  • 2 tsp chopped parsley
  • 1 teaspoon  salt
  • 2 tsp breadcrumbs
  • ½ teaspoon  black pepper
  • ½ teaspoon  paprika
  • ½ teaspoon  pepper
  • 1 tsp olive oil

Ingredients Group 2: Dumplings

  • ½ cup plain yogurt
  • 1 small garlic clove, grated
  • 2 tsp butter
  • 1 teaspoon  paprika
  • 1 tsp chopped parsley or dill
  • Extra black pepper to taste

Instructions
 

Make the Filling

  • In a large bowl, combine the ground chicken or beef, grated onion, garlic, parsley, salt, black pepper, paprika, and breadcrumbs.
  • Mix until everything is well combined, then shape the mixture into small balls.

Cook the Blanket Dumplings

  • Heat the olive oil in a large nonstick skillet over medium heat.
  • Add the meatballs to the skillet, leaving a little space between each one.
  • Place one dumpling wrapper over each meatball like a blanket.
  • Pour 1/3 to 1/2 cup water into the pan, then cover immediately with a lid.
  • Cook for 5 to 6 minutes, or until the filling is cooked through and the wrappers turn soft and slightly translucent.
  • Remove the lid and cook for 1 more minute if you want the bottoms slightly crispy.

Finish and Serve

  • In a small bowl, mix the yogurt with the grated garlic.
  • In a small pan, melt the butter and stir in the paprika for a quick butter sauce.
  • Plate the dumplings, spoon over the garlic yogurt, and drizzle with paprika butter.
  • Finish with parsley or dill and extra black pepper before serving.

  • Use dumpling wrappers straight from the package and keep them covered so they do not dry out.
  • Do not make the meatballs too large, or the wrappers may not cover them well.
  • For a crispier base, leave the dumplings in the skillet for 30 to 60 seconds after the water evaporates.
  • You can use ground chicken, beef, or turkey depending on your preference.
  • Serve immediately for the best texture.
